Healthy Zucchini Fries

Although I'm proud of myself for improving my diet & eating healthier, I'm still not eating many vegetables. If I'm being honest, a lot of them taste "earthy" to me. But since my goal is to live a healthier lifestyle, I'm pushing myself to do it– with a little bit of cheating.

 Luckily, this recipe is still healthy thanks to my air fryer. Air fryers require little to no oil, cutting calories & fat content. They also cook food fast & are easy to clean. It's one of the best products I own. I highly recommend purchasing one if you want to eat healthier.

This recipe consists of:

Panko Bread Crumbs
Italian Bread Crumbs (optional addition, but adds more flavor)

First, cut your zucchini into fries– about 3/4 inches long. Place them in flour & shake off any extra. Drench your zucchini in your beaten eggs until they are evenly covered & roll them around in your panko bread crumbs. I mix Italian bread crumbs in to add a little more flavor, but it's not necessary. Place your zucchini fries in the air fryer & drizzle a little oil of your choosing on top (olive oil, vegetable oil). Set your air fryer on 400º Fahrenheit for 8 minutes & flip your zucchini fries at 4. That's it, HOW EASY. 

This is a simple recipe that makes your veggies taste like they're not healthy, when they actually are! It's a win-win if you ask me. Try this recipe at home & let me know how you like it. Thanks for your support!
